Ingredients
  

For the Potato Mixture:

  • 3 large russet potatoes, peeled and grated​
  • 1 large onion, grated​
  • 2 large eggs​
  • ¼ cup all-purpose flour (or gluten-free flour)​
  • 1 tsp garlic powder​
  • 1 tsp paprika​
  • 1 tsp salt​
  • ½ tsp black pepper​
  • 2 tbsp vegetable oil, for frying​

For the Beef & Cheese Filling:

  • 1 lb (450g) ground beef​
  • 1 small onion, finely chopped​
  • 2 garlic cloves, minced​
  • 1 tsp paprika​
  • ½ tsp smoked paprika​
  • 1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)​
  • Salt and pepper, to taste​

Optional Toppings/Sides:

  • Applesauce or sour cream​
  • Ketchup or hot sauce​
  • Fresh parsley or dill for garnish​

Instructions
 

Prepare the Potato Mixture:

  • Grate the russet potatoes and onion, then squeeze out as much excess moisture as possible using a clean kitchen towel.​
  • In a large bowl, mix the grated potatoes and onion with eggs, flour, garlic powder, paprika, salt, and black pepper until well combined.​

Cook the Savory Beef Filling:

  • Heat a pan over medium heat and sauté the chopped onion until soft.​
  • Add the ground beef and cook until browned, breaking it up with a spatula.​
  • Stir in minced garlic, paprika, smoked paprika, salt, and pepper. Cook for another 2 minutes until fragrant.​
  • Remove from heat and mix in shredded cheddar cheese until melted and combined.​

Assemble & Cook the Pancakes:

  • Heat oil in a frying pan over medium heat.​
  • Take a scoop of the potato mixture and flatten it into a small round in your hand.​
  • Add a spoonful of the beef and cheese filling in the center, then top with another thin layer of potato mixture, sealing the edges.​
  • Gently place into the hot oil and fry for about 3-4 minutes per side, until golden brown and crispy.​
  • Remove and drain on a paper towel-lined plate.​
