Ingredients
  

For the Chicken Tawook Skewers

  • 1 lb boneless, skinless chicken breasts cut into 1-inch cubes
  • ½ cup plain yogurt
  • ¼ cup fresh lemon juice
  • 3 tbsp olive oil
  • 4 cloves garlic minced

For the Mediterranean Bowl

  • 2 cups cooked basmati or jasmine rice
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup Kalamata olives sliced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley chopped

Instructions
 

  • In a bowl, mix yogurt, lemon juice, olive oil, garlic, and spices to create the marinade.
  • Add chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 4 hours.
  • Preheat grill or grill pan over medium-high heat.
  • Thread the marinated chicken onto skewers and grill for 4-5 minutes per side until fully cooked and slightly charred.
  • Assemble the bowls by dividing the rice and topping it with grilled chicken, cherry tomatoes, cucumber, olives, feta, and parsley.
  • Drizzle with tzatziki sauce, add hummus, and serve with lemon wedges.

Notes

For best results, marinate the chicken overnight. Serve with warm pita bread or swap rice for quinoa for extra protein.
