Ingredients

  • 1 lb ground beef lean preferred
  • 4 medium potatoes sliced thin
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can cream of mushroom soup 10.5 oz
  • 1 cup milk
  • 2 cups cheddar cheese shredded
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tsp paprika optional
  • 1 tbsp butter melted

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Peel and slice the potatoes into thin rounds. Dice the onion and mince the garlic.
  • In a skillet over medium heat, cook the ground beef until browned. Drain excess grease and add the onion and garlic, cooking until fragrant.
  • In a bowl, whisk together the cream of mushroom soup, milk, salt, pepper, and paprika.
  • Grease a baking dish and layer half of the potatoes at the bottom.
  • Spread half of the beef mixture over the potatoes, followed by half of the soup mixture and half of the shredded cheese.
  • Repeat the layers with the remaining potatoes, beef, soup mixture, and cheese.
  • Cover with foil and bake for 45 minutes. Remove foil and bake for another 15 minutes, or until potatoes are tender and cheese is bubbly.
  • Let the casserole rest for 5-10 minutes before serving.

Notes

For a healthier version, use ground turkey and low-fat cheese. You can also substitute cream of chicken soup for a different flavor!
