Instructions
Preheat the oven to 375°F (190°C).
Peel and slice the potatoes into thin rounds. Dice the onion and mince the garlic.
In a skillet over medium heat, cook the ground beef until browned. Drain excess grease and add the onion and garlic, cooking until fragrant.
In a bowl, whisk together the cream of mushroom soup, milk, salt, pepper, and paprika.
Grease a baking dish and layer half of the potatoes at the bottom.
Spread half of the beef mixture over the potatoes, followed by half of the soup mixture and half of the shredded cheese.
Repeat the layers with the remaining potatoes, beef, soup mixture, and cheese.
Cover with foil and bake for 45 minutes. Remove foil and bake for another 15 minutes, or until potatoes are tender and cheese is bubbly.
Let the casserole rest for 5-10 minutes before serving.
Notes
For a healthier version, use ground turkey and low-fat cheese. You can also substitute cream of chicken soup for a different flavor!
