Instructions
Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
In a small bowl, blend the cottage cheese until completely smooth.
In a clean, dry bowl, whip the egg whites with cream of tartar and salt until stiff peaks form.
In another bowl, whisk together the egg yolks, blended cottage cheese, cornstarch, and honey or sweetener.
Gently fold the whipped egg whites into the yolk mixture in batches to keep it light and airy.
Carefully fold in the blueberries at the last step.
Spoon the batter onto the prepared baking sheet in small rounds or one large loaf.
Bake for 25-30 minutes until the tops are golden and the bread feels set.
Let cool slightly before serving.
