Cloud Bread Base

  • 3 large eggs, separated whites and yolks separated
  • 1/2 cup cottage cheese blended until smooth
  • 1/4 tsp cream of tartar helps stabilize the egg whites
  • 1/2 tsp salt enhances flavor
  • 1 tbsp cornstarch or arrowroot powder optional, for added structure
  • 1 tsp honey or a pinch of sweetener optional, for mild sweetness

Blueberry Addition

  • 1/4 cup blueberries fresh or frozen

Instructions
 

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a small bowl, blend the cottage cheese until completely smooth.
  • In a clean, dry bowl, whip the egg whites with cream of tartar and salt until stiff peaks form.
  • In another bowl, whisk together the egg yolks, blended cottage cheese, cornstarch, and honey or sweetener.
  • Gently fold the whipped egg whites into the yolk mixture in batches to keep it light and airy.
  • Carefully fold in the blueberries at the last step.
  • Spoon the batter onto the prepared baking sheet in small rounds or one large loaf.
  • Bake for 25-30 minutes until the tops are golden and the bread feels set.
  • Let cool slightly before serving.
