In a bowl, mix mashed potatoes, flour, baking powder, egg, salt, and pepper until a soft dough forms. If needed, add a little more flour.
Sauté garlic and onion until fragrant. Add shredded chicken and season with paprika, cumin, and black pepper. Stir in cheese if using. Let the mixture cool.
Take a small portion of the dough, flatten it, and add a spoonful of the chicken filling. Seal the edges and shape it into a doughnut. Repeat with the remaining dough.
Heat oil in a deep pan to 350°F (175°C). Fry the doughnuts until golden brown and crispy. Drain on a paper towel.
