  • 1 cup cottage cheese full-fat for the creamiest texture
  • 1/4 cup peanut butter creamy, natural, no sugar added
  • 2 tbsp sweetener honey, maple syrup, or sugar-free alternative
  • 1 tsp vanilla extract
  • 1/4 tsp salt optional
  • 1–2 tbsp milk or heavy cream if needed for blending

Toppings

  • chopped peanuts
  • dark chocolate chips
  • extra peanut butter drizzle

Instructions
 

  • In a blender or food processor, combine the cottage cheese, peanut butter, sweetener, vanilla extract, and salt.
  • Blend until completely smooth. Add milk or cream a little at a time if mixture is too thick.
  • Taste and adjust sweetness or peanut butter as needed.
  • Transfer mousse to jars or small bowls and chill in the fridge for at least 30 minutes.
  • Top with peanuts, dark chocolate chips, or extra peanut butter before serving. Enjoy chilled!

Notes

This mousse stores well in the fridge for up to 3 days. For a firmer texture, freeze for 20 minutes before serving!
