Instructions
In a blender or food processor, combine the cottage cheese, peanut butter, sweetener, vanilla extract, and salt.
Blend until completely smooth. Add milk or cream a little at a time if mixture is too thick.
Taste and adjust sweetness or peanut butter as needed.
Transfer mousse to jars or small bowls and chill in the fridge for at least 30 minutes.
Top with peanuts, dark chocolate chips, or extra peanut butter before serving. Enjoy chilled!
Notes
This mousse stores well in the fridge for up to 3 days. For a firmer texture, freeze for 20 minutes before serving!
