Ingredients
  

Main Ingredients

  • 1 cup chocolate chips semi-sweet or milk chocolate
  • 1/2 cup butterscotch chips or peanut butter
  • 2 cups chow mein noodles crunchy
  • 36 mini candy eggs such as Cadbury or M&M eggs

Instructions
 

  • In a microwave-safe bowl, melt chocolate chips and butterscotch chips (or peanut butter) in 30-second intervals, stirring until smooth.
  • Add the chow mein noodles to the melted mixture and stir until evenly coated.
  • Line a baking sheet with parchment paper. Spoon heaping tablespoons of the mixture onto the sheet and shape each into a small nest with a well in the center.
  • Place 2–3 mini candy eggs in the center of each nest while still soft.
  • Let the nests cool at room temperature or refrigerate for 30 minutes until firm.

Notes

Feel free to get creative with toppings—mini marshmallows, jelly beans, or shredded coconut all make fun alternatives! These cookies are great for making ahead and storing in an airtight container for up to 5 days.
