Ingredients
  

Main Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 packet fajita seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 onion sliced
  • 1 cup shredded Mexican cheese blend

Optional Garnishes

  • 1 lime juiced
  • fresh cilantro for garnish
  • sour cream, guacamole, or salsa for serving

Instructions
 

  • Preheat oven to 400°F (200°C). Place chicken breasts in a baking dish and rub with olive oil and fajita seasoning on all sides.
  • Layer sliced bell peppers and onions over and around the chicken breasts in the dish.
  • Bake uncovered for 25–30 minutes, or until the chicken is cooked through and reaches 165°F internal temperature.
  • Sprinkle shredded cheese over the chicken and veggies, then return to the oven for 5 minutes, until cheese is melted and bubbly.
  • Drizzle with lime juice and top with chopped cilantro. Serve with sour cream, guacamole, or salsa if desired.

This dish is fantastic with tortillas, over rice, or on its own. Great for meal prep or customizing with your favorite toppings!
