Ingredients
  

Soup Base

  • 1 lb ground beef
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 2 cups potatoes diced
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 4 cups chicken broth

Creamy & Cheesy Base

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups cheddar cheese shredded
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce

Instructions
 

  • In a large pot, cook the ground beef over medium heat until browned. Drain excess fat and set aside.
  • In the same pot, melt butter and sauté onions, garlic, carrots, and celery until softened.
  • Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  • In a small saucepan, melt butter and whisk in flour to create a roux. Slowly add milk and heavy cream, whisking until smooth.
  • Stir the roux into the soup and add the cooked beef back in. Mix well.
  • Reduce heat to low, stir in shredded cheddar cheese, Worcestershire sauce, salt, and pepper. Stir until cheese is melted and soup is creamy.
  • Serve hot, garnished with extra cheese or crispy bacon bits!
