2lbsboneless, skinless chicken breastscut into 1-inch cubes
1cupBBQ sauceplus extra for basting
2tbspolive oil
1tspgarlic powder
1tsppaprika
For the Salad
8cupsromaine lettucechopped
2cupscherry tomatoeshalved
1cucumbersliced
1/2red onionthinly sliced
1avocadodiced
1/4cupfeta cheesecrumbled
1/4cupfresh cilantrochopped
1/4cupranch or lime dressing
Instructions
Marinate the Chicken: In a bowl, mix BBQ sauce, olive oil, garlic powder, and paprika. Add chicken, coat well, and marinate for at least 30 minutes.
Prepare the Skewers: If using wooden skewers, soak them for 30 minutes. Thread marinated chicken onto skewers.
