Description

  • 2 cups all-purpose flour (or 00 flour for a silkier texture)
  • 3 large eggs (room temperature)
  • 1 tablespoon olive oil (optional, for added richness)

  • Water (as needed, for adjusting dough consistency)

For the Sauce (Optional – Classic Mushroom Cream Sauce):

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 cup mixed mushrooms (such as cremini, shiitake, or portobello), sliced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

1. Make the Dough:

  • On a clean surface, mound the flour and create a well. Add eggs, olive oil, and salt.
  • Gradually mix with a fork, then knead for 8-10 minutes until smooth.
  • Wrap and rest for 30 minutes.

2. Roll and Cut:

  • Divide dough into portions and roll out thinly.
  • Fold and cut into ¾ to 1-inch wide ribbons.
  • Dust with flour and set aside.

3. Cook the Pasta:

  • Boil salted water and cook pasta for 2-3 minutes (fresh) or 8-10 minutes (dried).

  • Sauté garlic and mushrooms in oil and butter.
